Simple & Delicious Cobbler
We had a blast picking black berries this weekend, and in the end we brought home a bounty of berries! I shared a picture in my stories and within a few minutes our friend Chef Rodney sent me several ideas of what to do with our delicious harvest.
We had dinner planned, so I chose to make Rodney’s Cobbler recipe for our desert….and it was amazing. This simple and delicious recipe takes less than an hour from start to finish and what is nice is that I had all of the ingredients in my pantry.
You won’t regret this yumminess
Ingredients:
1/4 cup butter (melted)
1 cup all purpose flour
1 cup granulated sugar (plus 3 tablespoons to dust fruit)
1 teaspoon baking powder
1 teaspoon vanilla extract
1 cup whole milk or cream
4 cups cut stone fruits or berries
Instructions:
1. Preheat oven to 350 F
2. In a medium bowl, stir together all ingredients (except fruit) for 1 minute
3. Add fruit or berries to cooking vessel and add the 3 tablespoons sugar (add more or less at this point, if using fresh ripe seasonal fruits and berries, he suggests nor to precook)
4. Pour batter on top
5. Bake about 30 minutes, or until crust is golden brown
I used a pie dish this time, but next time I will be using my cast iron skillet.
Chef Rodney’s advice is that the recipe is about the fruit or berries, so don’t add so much sugar that it takes away from what nature intended. I took that advice, made a scrumptious cobbler and watched my whole family enjoy the fruits of our labor.
